Happy Birthday To ME!

Although today is my official birthday – my amazing family got together this past weekend for an early birthday celebration! We ate dinner, came home to my mom’s amazing homemade cheescake and mint squares and they surprised me with a new kitchen accessory:




This momma got an amazing KitchenAid Mixer!!!!!!!!!!!!!!!!!!!!!!!!!!!

This new addition got me so pumped, I cleaned out and rearranged my entire kitchen to give it a nice new home! But of course I didn’t stop there. I found some awesome pins to keep me busy for the next year making delicious things for my family. Here’s some great things I found:


A must know, to me it really is the most important thing first!


We love banana bread in this house so that will be the first thing I attempt to make!


Now that I have this sweet thing, I am going to need to re-organize my baking things!!


And here comes my wishlist for Christmas next year haha!


Let’s just say I’ll be busy ๐Ÿ˜‰ and I will be sharing all the fun things I make with you as well!


Easy Enchiladas!

For most of you that know me, things that are difficult tend to not get done around here ๐Ÿ˜‰ The easier the better and since I am not the most amazing cook, that applies to all of my meals. I found this recipe in a cookbook my mom had stashed away in her pantry and doctored it up a bit (made it easier than ever) and in my opinion – it’s pretty delicious!


(you can use your own brand if you choose to this is just what I use)

1 16oz can of Old ElPaso Refried Beans
1 28oz can of Old ElPaso Enchilada Sauce
Mexican Shredded Cheese
5 Mission Tortilla’s

and any extra ingredients you’d like to top it with like lettuce, sour cream, etc.


Preheat the oven to 350 degrees. Spray or butter the pan. Mix Refried Beans, 1/2 cup of enchilada sauce, and a handful or cheese in a medium size bowl until well blended. Lay out tortilla and in a straight line fill it with mixture. Sprinkle a handful (or a half of a handful) of cheese on top of the mixture. Fold the tortilla, flip upside down, and lay flat in the baking dish. Repeat until finished. Pour the rest of the enchilada sauce on top of the tortillas and sprinkle heavily with cheese. Put in the oven for 30 minutes!

My preference is to make this a day in advanced and put it in the refrigerator. I don’t know why but to me it tastes better after it’s been chilled and reheated. To reheat it, I’ll throw it in the oven at 350 for 10 minutes or so just until it’s hot!

I hope everyone has a happy and safe Thanksgiving! Today we are spending it in Alexandria with family. A lot has happened in the past year for my sister and I and I am so proud to be spending Thanksgiving at her house this year. We are finally grown ups and able to celebrate the holidays in our own homes. I’m also super thankful because I know her and her husband are going to make mouth watering food! I’ve never had a meal there that I didn’t love!

Really Jenn… Already?!

I can’t believe I’m doing this already. It’s been day two of cold weather and I’m already seeing myself fall into the habits I had last winter ๐Ÿ™‚ Was it me who just said I loved fall weather in the last post? I must be crazy because I might love the weather, the sweatshirts, the hot chocolate, and the blankets, but there is a slight malfunction with my love fall weather that I hadn’t noticed before.

I’m glued to this couch.. problem – HUGE PROBLEM! In my joyful post about all the things I love about cold weather I seemed to have left out all the things that I don’t particularly like about cold weather. So here’s a make up post for things I don’t want to happen this year with cold weather!!!

My mood for the day directly resides in the fact that I accomplish something that I am proud of. That is not an easy task to do while glued to the couch ๐Ÿ˜› I’m starting to find myself getting what’s absolutely necessary done in the morning, getting hot chocolate, and hopping on the couch in my cozy little blanket.

Good news is that 99% of my work is on the computer which happily heats up my little legs. Bad news is laundry, dishwasher, cleaning, cooking, and even simple tasks like going to the bathroom seem terribly awful! Why oh why would I want to move from this amazing place I’ve created? Oh that’s right – because I have a child to take care of ๐Ÿ˜›

I’m starting to believe this weather is more of a love/hate relationship so instead of falling back into these old habits I am going to write down all the things I WILL get done each day whether I like it or not – and a few solutions to why I don’t like cold weather:

I’m going to take a steaming hot shower every morning, dry my hair, straighten my hair, and look presentable as many days of the week as I possibly can – because when it’s cold outside I refuse to get out of bed and then I look like a mess (I was going to say hot mess but there’s nothing hot about it nor is it hot outside).

I’m not going to let my pretty little bottom sit on the couch until I have accomplished all chores for that day. That way I have accomplished something and won’t feel like such a slob around here.

I’m going to do as much computer work as I can at night (when I enjoy writing the most anyways) so I can do all the above things in the morning without feeling like I’m running behind on my work!

I’m going to make sure I am making something warm to eat each day. Whether it’s baking or crock potting or something else. I absolutely love that baking in the oven heats up the house and eating warm food always warms me up! I am going to heat up this place and make sure that I haven’t given up on cooking all together!

To wear off all this cooking I’m also going to make sure that I spend a minimum amount of time organizing or cleaning some part of this house each day. Preferably things that make me go up and down the stairs to exercise off all that home cooked food ๐Ÿ˜‰

Last but not least – I am going to actually invest some money in some amazing cold weather clothes so that when I do go out of the house to drop/pick Emma up I am warm, comfortable, and look presentable. Those things never happen in my frumpy sweatshirts.. which don’t even keep me that warm anyways!

Mini Meal: Egg Salad Sandwiches

Hey everyone! It’s my first Mini Meal post!! HIP HIP HOORAY! I plan to have many of these throughout my blog to hopefully compile a great list of ideas for everyone.

For those of you who don’t feel like clicking the link I’ll give a brief description!

Mini meals came about when I was trying to find new things to make for Emma to see if she would eat/like them but I didn’t feel like making an entire meals worth! Especially if she didn’t like it (or I don’t like it either!!) so I decided I’d figure out how to make meals for one person (or just my mini me).

Today I am making Egg Salad Sandwiches for my little one!

006Since I’d be eating this one too I put in three eggs. If I had been making this for just Emma I would have only done one.

Fill a pot with water and add the egg(s) and let it come to a boil. Once it starts boiling set the timer for 12-15 minutes. While you are waiting for it to boil you can get the rest of it ready!:


Pull out vinegar, mayo, mustard, salt, and pepper and a little bowl for mixing it in.

009When it comes to egg salad it’s all about preference but I’ll go ahead and let you know I like mine a little sloppy (extra mixture) rather then clumpy (more egg than mixture). SO! For three eggs I put in a half a cap of vinegar, four-five squirts of mayo, three-four squirts of mustard, and a good shake of salt and pepper. Mix Mix Mix!


I like using toast and I like it to be a little toasted since my egg salad is sloppy ๐Ÿ™‚ but for Emma I put her’s on a sandwich bun. It’s easier for her to hold and eat and I buy the little mini ones (like for sliders) and she LOVES them! I also like lettuce on mine (Emma does not!).


After the eggs are done boiling – pour it out into a strainer and run the eggs under cold water (because they will be hot HoT HOT!).

012Crack the edges and peel off the shell (for me this is the fun part! Don’t ask me why – I just like it)

013If you don’t have a smancy fancy dicer like min just use a nice to cut it into slices then squares ๐Ÿ™‚


Mix it up and up and dish it on your toast!

015We didn’t have my mini slider bun rolls today but she did just fine (after pulling out all the lettuce – it was worth a shot ๐Ÿ˜‰ haha) and it was a success! My child will eat egg salad sandwiches and I didn’t have to make a bunch and throw it away!!

I will say now that we’ve tried this – it has become a staple in this house! We eat it about once a week or every other week for lunch in this house and instead of making a bunch I just make one serving each time!

**For those of you who are packing lunches and taking them to work – you can make this meal the night before or the morning of and take it to work with you – just pop in the fridge and you can even eat it cold!**

Mini Meals

Today I made Emma a grilled cheese sandwich for lunch. She has like five favorite lunch meals that we tend to rotate through and I try to throw in something different each time. It’s been hard to come up with new lunch ideas when I don’t want to make an ENTIRE meal and her not eat it and then I’m stuck with the leftovers..

An idea popped into my head. Meals for one – better yet mini meals!

Although these look great – they still make a bunch! What I was really looking for was recipies that create a nice meal for one!

So I’m going to attempt to take a couple meals and create a recipes for one! I’ll be posting it here with the ingredients and instructions and Emma’s taste test approval ๐Ÿ˜‰

A Little White, A Lot of Color!

This weekend I had a high school reunion with one of my best friends! We spent the entire weekend shopping, crafting, catching up and creating a masterpiece ๐Ÿ™‚


This girl rocks my world! She is always up for a good time and ready to get crafty in seconds ๐Ÿ™‚ We are so much alike that it’s scary sometimes but my favorite thing about her is that she always surprises me! Just when I think I know her so well, she shocks me with more personality and drive. Catching up was way past due and I am so thankful we found the time to make it happen.

During our shopping trip I bought a new item for my craft show table to display my new necklaces. Nothing shows off what you make than seeing it worn and I felt like this necklace needed that. I’m excited for this new addition to my table ๐Ÿ™‚


We also bought a pack of 80’s glam sharpies. We love color and we decided to try a project with them! You’ll get to see the whole thing soon but for now I’ll just give you this as a sneak peak ๐Ÿ˜‰


Another sneak peak is what’s about to happen! There is going to be a huge change in my blogging life. I am now starting a blog with Leslie! We are still working on getting it set and ready – so it won’t be open until January but I am so excited I couldn’t not share!

The Underestimated Mom will still be updated but more like two – three times a week instead of almost daily. Most of my time will be spent making articles for A Charming Twist. If you are interested in keeping up with Leslie & I head on over there now or starting in January.

Nick Mom, You Crack Me Up

I don’t know if you all have heard of Nick Mom or not but while staying up and finishing chores I decided to watch it one night. I haven’t laughed so hard in such a long time! This show is like Comedy Central for mothers.


For those of you who are mothers that love to laugh at all the ridiculous things that your kids get into – this is for you. For those of you who are mothers that get offended easily – don’t watch this!! As for me, I’m a mom that laughs and this made me laugh.

They have two different shows that I’ve seen: Parental Discretion which is basically like SNL for Moms. Some parts are funny some parts are just plain dumb.

Another show is Mom’s Night Out which is stand up comedy, again funny.

Something you probably weren’t expecting, the commercials are even jokes and one liners to make you smile. This was definitely an interesting night for me!

Happy Thanksgiving!

This year for Thanksgiving – we are spending time in Front Royal with Brian’s side of the family. We do it potluck style where we each bring ย something, we catch up, watch the game (I married into a Redskins family), and eat!! I can picture it now – the men in their jersey’s hanging out in front of the TV, the women talking about life, and Emma running around like she’s been eating sugar for weeks ๐Ÿ˜‰

So while that image entertains you (hopefully as much as it entertains me) here’s a list of things I am thankful for this year:

My loving family.

The ability to do what I love each day.

That even though sometimes we are stressed out and trying to make things work around here – that we are able to do it and we make it through all the hard times together.


I know that there is WAY more to be thankful of but right now, those are the most important for me ๐Ÿ™‚

Look How Far I’ve Come!

So last night I was checking out some of my first posts here at The Underestimated Mom. I was reading about how I had no idea what I was going to write but that I really wanted this to become a way to tell my life to anyone who was interested.


Back then, Emma was 9 months old and napping so much during the day that I had all this extra time on my hands that I didn’t know what to do with. I had just quit my job that I loved/hated, and was on my way toย discoveringย what it was I wanted to do with my life (besides the obvious: be there for my daughter 24/7).

At that same time, I started to crochet and of course the crazy person I am decided to START crocheting one of the most difficult patterns ever. Here’s a picture of a sweater jacket I was making for Emma. It turned out great (minus the fact that there was supposed to be a hood that neverย happened).

It was then I learned that I loved being home with Emma, I loved to crochet, I loved to blog, and I wanted to do whatever it took to keep those three loves in my life.

After facebooking and blogging about what Emma and I were up to, what I was crocheting, and my random thoughts along the way, a friend introduced me to Etsy. A place online where I could sell what I made. When I first searched the website I immediately daydreamed of having a shop and making an income so I’d never have to leave Emma to work again!

After months of not selling anything I went route two. I decided to provide child care from my home for a child. I can’t even explain how much I am so grateful for the moment I made that decision. Now I have two other children besides my own in my life that I’d never want to not care for! Of course, they will grow up and not need me anymore, but until then I’ll imagine they’ll never grow up!

It’s been over two years now that I’ve been blogging, selling the items I’m making (on my own site now!), and providing child care. It’s been a long two years!



For those of you who have been with me since the beginning I’m sure you are shocked at how much things have changed around here. For those of you who are new – now you know the back story! It’s amazing what a little time can do to someone. All I needed was a few weeks at home with my daughter to figure out the rest of my life. A few weeks is all it took and I wouldn’t change it for the world.

I’m excited, nervous, anxious, and hopeful for what the next two years might bring!
