New Toys for Mommy!!

When Brian gets spending money – he buys video games and DVDs, every chance we go out and Emma is amazingly sweet and patient we buy here a $1.00 toy, when I get spending money – I buy organization and functional things!! ❤

Fun new canisters to hold my favorite things – sugar, rice, brown sugar, and powered sugar! ❤ Can you tell I love sugar? 😉 My favorite thing about these canisters is the little rubber pieces at the top. They squish out all the air when you close them and you know it’s sealed tight! Love Love Love!

 

Since we don’t have much counter space – I’ve never been the kind of person to buy something that blatantly takes up perfectly usable counter space but I couldn’t resist! This piece was so perfect and I LOVE fresh fruit. It’s been the one thing that’s kept me from snacking on chips and other horrible snacks. Now that it’s out and in my face, hopefully I’ll take advantage of it and it will be easier to pick fruits over junk 😉

 

My junk drawer needed me to buy this! We have so many darn utensils that we usually on a random basis. My usual utensils get lost in them and it becomes a frustrating time when I’m in the middle of cooking. So I bought this to pull out my most used pieces. My favorite thing about this piece? It swivels!! So I can just smack it around until I find what I want 😉 If only everything in life was that fun!

I can’t wait to go to Target with some more spending money. I’m thinking about all the fun organization pieces I can find for the living room and our bedroom!

Day one of Deception ;)

Today I planned out my list of recipes to try from Deceptively Delicious by Jessica Seinfeld and I am super excited!! Not only is it going to fit in with my usual grocery list budget but it’s making twice the amount of meals that I was getting out of my usual buys! Curious about what I am going to try?

I broke it down into three separate sections. Breakfast, Lunch/Dinner, and Dessert, which could end up being two sections.. I’ll explain at the end!

Breakfast: French Toast & Banana Bread

Lunch & Dinner: Meatball Soup, Pita Pizzas, Mac ‘n’ Cheese, Spaghetti, Potato Soup, & Lasagna

Desert: Brownies

Along with our usual options

Breakfast: Blueberry Muffins, Oatmeal, Yogurt, Toaster Strudels, Pop-tarts, Cereal, Eggs, Sausage, Bacon, and Biscuits

Lunch & Dinner: Salads, Egg Salad, Cheese Ravioli’s, Chicken Nuggets, Bagel Bites, Pizza Pockets, Chicken Cordon Blue, Chicken Parmesan, Taco Soup, Quesadillas, Tacos, Hamburger Helper, Easy Chicken, Cheesy Potatoes, BBQ Chicken, Chicken Cacciatore, Taquitoes, Hot Dogs, Meatballs (Subs), Teriyaki Chicken Rice & Corn, PB&J’s, Deli sandwiches, Grilled Cheese, Shiskabobs, Steaks & Baked Potatoes

Dessert: Candy candy candy candy! 🙂

So this might last me four weeks instead of two weeks and I’ll be happy with whatever I can get!! If I do stock up enough for four weeks I could really use the second grocery run money for some nice vacation time 😉

Tomorrow I’ll be grocery shopping and preparing food all day 🙂 So each day this coming week I am going to try out one or more of the recipies and do a review with pictures included! I’ll even let you know what B says since he’s the picky eater 😉

Smoked Almond Chocolate Shortbread

If you don’t like almonds, JOIN THE CLUB! But I made these anyways because they looked so good and after a bit of a failure to begin with these things turned out great! Even for all of the almond haters like me!

Ingredients:

Shortbread:

1/2 cup (2 ounces) smoked (or roasted) almonds

1/2 cups of flour

1/2 teaspoon of salt

10 tablespoons of softened butter (plus additional for the pan)

1/2 cup light brown sugar, packed

1/4 teaspoon of almond extract

Chocolate Caramel:

11 ounces (2 cups) milk chocolate chips

1 1/2 cups sugar

1/4 cup light corn syrup

1/4 cup of water

6 tablespoons butter

1 cup of heavy cream

1/2 teaspoon of salt

1 tablespoon of sea salt or smoked salt (optional .. i optioned out)

Directions:

Shortbread:

Preheat oven to 350 degrees. Line 9×9 inch pan with parchment paper or foil. Butter the interior of the paper or foil. Grind smoked almonds in food processor or use the slap chop like me (too much fun) until the consistency of coarse corn meal. In medium bowl, whisk together ground almonds, four, salt, and cinnamon and set aside.

In large bowl, beat butter, brown sugar, and almond extract with electric mixer until light and fluffy. Add flour mixture in two batches mixing until crumbly, but sticky dough forms. Press down evenly into bottom of prepared pan. Bake until golden brown, about 25-30 minutes. Let cool completely on wire rack.

Chocolate Caramel:

Place chocolate in medium glass or stainless steel bowl and set aside. In medium saucepan, combine sugar, corn syrup, and water. Cook mixture over medium heat 10-12 minutes until mixture coast the back of a wooden spoon.

Remove from heat. Add butter, cream, and salt. Return to heat and simmer over medium heat, stirring until smooth. Simmer 2-3 minutes. Pour mixture over chocolate and let it stand for two minutes. Stir until smooth and let it stand to cool slightly, about 10 minutes. Pour mixture over shortbread and allow to cool for about 30 minutes and then refrigerate overnight. (It says about 5 hours but mine took way more than that!!)

I give this 3 and a half stars. It turned out great but I am not crazy in love with it so I’ll try another recipe soon 🙂

Sunday Funday!

If all you have been thinking about is Christmas cards you are completely like me .. last year! This year I vowed to have all the Christmas cards and Thank You cards completed before December happened and YAY! It happened!! I wanted to keep the similar style but do something a little different and I think they turned out pretty well 🙂 I also dabbled with colored inks instead of black and although it was fun it didn’t really show up on the red and dark green cards. I think I’ll have to stick to white or pastel color paper when I use color inks.

I managed to finally clean E’s room!!! She outgrew her clothes and I was running out of space to keep them so her floor was covered in piles of and boxes of clothes for a while. It’s all nice and clean now!

Totally random but we got this from a friend of a friend for the baby shower and every day I admire it! I can’t wait until I get back to this level of creativity… the saying “You lose it if you don’t use it” really applies to me.

And last but not least!! My plans for tonight when E goes to bed 🙂 I got these two recipes from a free thing I got from www.freebies4mom.com (if you clicked on this last link in my last post it took you to a completely wrong website .. this one is the right one! Sorry!!) Anyways it came with like 8 different holiday dessert recipes and I got the stuff to make both of these. Super Excited!! I will let you know how they turn out tomorrow.
