For most of you that know me, things that are difficult tend to not get done around here 😉 The easier the better and since I am not the most amazing cook, that applies to all of my meals. I found this recipe in a cookbook my mom had stashed away in her pantry and doctored it up a bit (made it easier than ever) and in my opinion – it’s pretty delicious!
(you can use your own brand if you choose to this is just what I use)
1 16oz can of Old ElPaso Refried Beans
1 28oz can of Old ElPaso Enchilada Sauce
Mexican Shredded Cheese
5 Mission Tortilla’s
and any extra ingredients you’d like to top it with like lettuce, sour cream, etc.
Preheat the oven to 350 degrees. Spray or butter the pan. Mix Refried Beans, 1/2 cup of enchilada sauce, and a handful or cheese in a medium size bowl until well blended. Lay out tortilla and in a straight line fill it with mixture. Sprinkle a handful (or a half of a handful) of cheese on top of the mixture. Fold the tortilla, flip upside down, and lay flat in the baking dish. Repeat until finished. Pour the rest of the enchilada sauce on top of the tortillas and sprinkle heavily with cheese. Put in the oven for 30 minutes!
My preference is to make this a day in advanced and put it in the refrigerator. I don’t know why but to me it tastes better after it’s been chilled and reheated. To reheat it, I’ll throw it in the oven at 350 for 10 minutes or so just until it’s hot!
