Happy Birthday To ME!

Although today is my official birthday – my amazing family got together this past weekend for an early birthday celebration! We ate dinner, came home to my mom’s amazing homemade cheescake and mint squares and they surprised me with a new kitchen accessory:

This momma got an amazing KitchenAid Mixer!!!!!!!!!!!!!!!!!!!!!!!!!!!

This new addition got me so pumped, I cleaned out and rearranged my entire kitchen to give it a nice new home! But of course I didn’t stop there. I found some awesome pins to keep me busy for the next year making delicious things for my family. Here’s some great things I found:

Easy Enchiladas!

For most of you that know me, things that are difficult tend to not get done around here 😉 The easier the better and since I am not the most amazing cook, that applies to all of my meals. I found this recipe in a cookbook my mom had stashed away in her pantry and doctored it up a bit (made it easier than ever) and in my opinion – it’s pretty delicious!

Ingredients:
(you can use your own brand if you choose to this is just what I use)

1 16oz can of Old ElPaso Refried Beans
1 28oz can of Old ElPaso Enchilada Sauce
Mexican Shredded Cheese
5 Mission Tortilla’s

and any extra ingredients you’d like to top it with like lettuce, sour cream, etc.

Instructions:

Preheat the oven to 350 degrees. Spray or butter the pan. Mix Refried Beans, 1/2 cup of enchilada sauce, and a handful or cheese in a medium size bowl until well blended. Lay out tortilla and in a straight line fill it with mixture. Sprinkle a handful (or a half of a handful) of cheese on top of the mixture. Fold the tortilla, flip upside down, and lay flat in the baking dish. Repeat until finished. Pour the rest of the enchilada sauce on top of the tortillas and sprinkle heavily with cheese. Put in the oven for 30 minutes!

My preference is to make this a day in advanced and put it in the refrigerator. I don’t know why but to me it tastes better after it’s been chilled and reheated. To reheat it, I’ll throw it in the oven at 350 for 10 minutes or so just until it’s hot!

Mini Meals

Today I made Emma a grilled cheese sandwich for lunch. She has like five favorite lunch meals that we tend to rotate through and I try to throw in something different each time. It’s been hard to come up with new lunch ideas when I don’t want to make an ENTIRE meal and her not eat it and then I’m stuck with the leftovers..

An idea popped into my head. Meals for one – better yet mini meals!

Although these look great – they still make a bunch! What I was really looking for was recipies that create a nice meal for one!

So I’m going to attempt to take a couple meals and create a recipes for one! I’ll be posting it here with the ingredients and instructions and Emma’s taste test approval 😉

This will be exciting!!

Goodmorning Zombie

E woke up at 5:00 a.m. this morning with a serious boost of energy! I know I looked like a zombie and probably was absolutely no fun to play with but she seemed to have a good time playing by herself. Which brings us to 12:15 p.m. E barely ate any of her lunch (she did have a huge breakfast) and it took her all of 2 minutes to pass out as soon as she was laying on the couch. I picked her up and put her in her crib without waking her up and that never happens! Somebody was tired!! I’m not sure if this is going to be a continuous thing and I am crossing my fingers it’s not but I’d have to say she has been an angel all day long.

So here I am a little on the exhausted side trying to figure out what I want to eat for lunch and a little on the bummed side. I tried the Lasagna out of the Deceptively Delicious book and didn’t add the puree‘s just so I could see if I liked the recipe before I added deception 🙂 It wasn’t exactly my favorite thing in the world. This recipe is quite different from the way that my family usually makes lasagna so I was going into it with an ehh kind of mood. She uses cottage cheese and we use ricotta, she uses mozzarella and we use cheddar (and lots of it!!), she uses canned whole tomatoes pureed and we use tomato sauce (again LOTS of it!). I think I’ll stick to my version of lasagna and see if I can add deception that way. The way that she instructs you to make the meat it clumped it all together so it made it hard to spread out evenly in the pan, and the tomato wholes made it watery and not really saucy. The other thing I wasn’t to crazy about was that it was kind of bland. I think I would double the amount of garlic that she put in and maybe some other italian spices.

So far it’s the only recipe that I have tried that I don’t like! So I am not giving up, but I am making my own homemade lasagna 🙂

B has been amazing all day today. When he woke up and realized that E and I had been up since 5:00 a.m. he made breakfast for me, cleaned it up, took care of E when she needed attention, made her lunch, cleaned it up, and is now making me lunch. 😀 I am the luckiest girl in the world. He is even making tea (with the help of my instructions). What an amazing guy.

B plans on watching football all afternoon, and I’ll be watching the Steelers game tonight!! GO STEELERS!! And I am crossing my fingers E stays the little angel that she has been all morning so we can continue to have a completely lazy day (hopefully including a nap for me!)

I’ll be more interesting tomorrow, I promise 😉

Luxuriously Lazy!

This morning B woke up at his normal time and his alarm went off without me hearing it like usual. I usually never wake up or hear him leave but this time I woke up while he was in the shower and I couldn’t go back to sleep. I was a little frustrated and thought of all the things I could do to keep me busy this morning until E woke up. I turned on the light by the bed and saw the book I just picked up from the library. Problem solved! I spent the entire morning reading this book and it is so addicting. I am loving it! Thanks to the nook I have decided never to buy a book again unless I can get a sample of it to read the first 50 pages see if it’s interesting.

Today I had planned on moving everything back to our original place since the disaster and doing laundry. Today E and I have been watching sprout, taking naps, cooking, and relaxing! Although it has been a fabulous day, I am waiting for the guilty feeling to sneak up on me but as of right now I still feel like I have the rest of the day to accomplish something so I am not too worried.

I decided to have fun cooking this morning so I made up my own recipe.. which I will warn you the last couple times I tried to make up my own recipe it was an epic fail.. but I was feeling quite confident today!

Ingredients:
1-2 pieces of thinly sliced chicken
Pasta of your choice
Butter
Salt & Pepper
Any spices you like (I used italian spices)
Cream cheese
Half n Half or Milk
Grated parmesan cheese
Either a can of Ragu, Prego, or a can of Petite Diced Tomatoes (I used Ragu because that’s all we had but next time I am using Petite Diced Tomatoes)

Instructions: I defrost the chicken then cut it up into bite size pieces. Dash salt and pepper and add a tablespoon of butter in a sauce pan. When the butter is melted While the water was boiling for the pasta I let the chicken brown. Add pasta to boiling water and set timer for the amount of time instructed on the box. Then when the chicken is browned and cooked all the way through add a quarter of cream cheese cubed. Once the cream cheese has melted add a cup of half n half or milk and a cup of grated parmesan cheese. Put the saucepan on low and it cook until the pasta is ready. If you like everything hot like I do I took a cup of the Ragu (Prego, or Petite Diced Tomatoes) and put it in the microwave just to warm it up. Strain the pasta pour into a bowl, add the chicken and cream sauce, then top with Ragu! Totally yummy!!

Well E and I are going to cuddle before her next nap time 🙂

Chicken Carbonara … YUMMMM!

You know those days where you have one major thing to do and it takes all day to do it? That’s today for me! I am making dinner for my family (B and E) and B’s parents (Nana and Dodo and possible his brother and brother’s wife Uncle J and Aunt S). Of course there’s only so much I can do because B is going to be grilling up the chicken but I thought I would share the recipe with you all.

Chicken Carbonara .. YUUUUMMM. I totally stole this recipe from my mom (Thanks Momma D!) and she apparently stole it from Kraft 😉

Ingredients:

1/2 lb of fettuccine pasta (or whatever pasta you like insert here)

4 slices of bacon chopped

4 oz of philadelphia cream cheese cubed

1 cup of grated parmesan cheese (it calls for 1/2 but we loooove our cheese)

1 cup of milk or half n half (we use half n half)

1 cup of frozen peas (or forget the peas please is what B says)

1/2 teaspoon of garlic powder or garlic salt (your preference here but we use salt)

As you can see Momma D changes things up.. but we love it!

Before you do anything! Get that chicken out of the freezer and drowned it in italian dressing for about an hour or so. For four pieces we usually use a half of a regular bottle of italian dressing or more.

Cook the pasta as directed on the package while cooking bacon in a large skillet until crisp. Remove bacon with slotted spoon to paper towels (or leave it in and enjoy the fatness like us!) Add remaining ingredients (cubed cream cheese until melted as much as possible, then milk, then peas or no peas, and garlic powder) Cook on low heat in skilled until mixture is well blended and heated through.

Drain pasta and place in a large bowl and add mixture (or after draining the pasta put it in the pan with the goods and mix it up so you can see if you  need more cheese or milk depending on if you like things creamy or cheeesssyyy!)

While I am doing this B grills the chicken so it’s hot and fresh! You can slice up the chicken and put it in the pasta or keep it separate. Either way it’s FANTABULOUS!
